'Eating Categories, Eating in Categories, in Contemporary Indian Society’

In India, the opposition between the “vegetarian” and the “non-vegetarian” is part of common knowledge, which goes beyond dietary patterns. The discussion aims at comprehending the way cultural dimensions of food revealed through these categories, organize food practices. Conversely, it examines how social practice (spatial, temporal, and social dimensions of dietary patterns) simultaneously reconfigures the vegetarian versus non-vegetarian dialectic. The case of India illustrates this interplay in the context of social change, individualization and globalization of ideas and goods. How is the opposition “vegetarian” versus “non-vegetarian” affected since it arranges the way of “living together”? Is it likely to disappear? How does new knowledge from nutritional science and medicine alter values associated with these food categories? The discussion proposes answers to these questions, based on the observation of dietary practices and using individuals’ narratives on their practices.

*Estelle Fourat completed a PhD in Sociology (from University of Toulouse Jean Jaures, France). Her research interests focus on eating choices, changes in food patterns and the role of socio-cultural dimensions in the nutrition transition. Her PhD addressed the protein transition theory, which corresponds to the process of substitution between proteins involved in the cycle of the nutrition transition. A socio-anthropological perspective of that process unravels the determinants of food decisions regarding animal-based protein foods and their forms of embedment in food categories. Dr. Fourat has already co-signed a published article with Dr. Lepiller in the Journal Sociologia Ruralis, and is currently writing several articles valorising her PhD findings.

** Amita Baviskar is Associate Professor of Sociology at the Institute of Economic Growth, Delhi. Her research focuses on the cultural politics of environment and development. Her first book In the Belly of the River: Tribal Conflicts over Development in the Narmada Valley (Oxford University Press) discussed the struggle for survival by adivasis in central India against a large dam. Her subsequent work further explores the themes of resource rights, subaltern resistance and cultural identity. More recently, she has focused on urban environmental politics, especially bourgeois environmentalism and spatial restructuring in the context of economic liberalization in Delhi. Her latest research examines changing food practices in western India in relation to the transformation of agrarian environments.
